Neapolitan Chia Parfait
Not that long ago, I used to be a serious chia hater, oh how times have changed. Chia seeds can be somewhat intimidating as they can taste pretty plain on their own. However when dressed up they can be a delicious addition to smoothies, or an alternative to conventional, puddings and parfaits.
If you haven't yet hopped on the chia train, let me tell you why you need to hop aboard (CHIOO-CHIOO!?). Chia seeds are an excellent source of fibre and can absorb up to 10x their weight in water helping to keep you regular, and feed good digestive bacteria in the gut. Fibre also helps to slow down the absorption of sugar helping to maintain stable blood glucose levels, so they're a great thing to add to sweeter recipes so you don't sugar crash.
These little seeds also a significant source of omega 3 fatty acids, which are an essential fatty acids that your body needs for numerous functions. Hormone production, and cell hydration are two of the main things, but every cell in the body requires good healthy fats to maintain their cell membrane!
They also look like baby dinosaur eggs up close, which is kinda wonderful.
